Processing butter, 1915

Description

This photograph, taken in1915 in the creamery, depicts a group of students processing butter. They are shown working with the motorized butter churns and wooden butter tubs. The churn agitates cream, bringing together its fat globules into lumps of butter, and leaving behind a liquid called buttermilk. A series of milk cans, used to transport milk from the milking parlor to the processing area, appear on the right. All of the students are dressed in the traditional white jacket and trouser uniform used in the dairy industry.
The first coursework specifically on dairying was offered at the Iowa Agricultural College in 1880 and included instruction on the breeding and care of dairy cows, milk composition and production, and manufacturing of cheese and butter. In 1890, the Iowa Agricultural College Board of Trustees approved the building of the College creamery and the beginnings of a dairy program. The Department of Dairying was established in 1898 and included: a four-year course, a one-year course, a winter course, and a summer course. Graduate work was first offered in 1911. The name of the department changed to the Department of Dairy Industry in 1928, then to the Department of Dairy and Food Industry in 1957. In 1961, it became the Department of Dairy and Food Industries and in 1969, the name and curriculum were changed to the Department of Food Technology. In 1990, the department merged with the Department of Food and Nutrition to form the Department of Food Science and Human Nutrition.

Description

This photograph, taken in 1919, shows a group of students working in the cheese laboratory. Several cheese vats appear in the foreground. To the left in the photograph a student is standing by a cheese press, while several others are working at a table. Benson Cow Testing Association, 1909

Description

Members of the Benson Cow Testing Association are shown in 1909 in this photograph. The group is composed of twenty-four men. In the back row, third from the right is R.K. Bliss, who received a B.A. in animal husbandry from Iowa State College (University) in 1905, and was Director of Extension at Iowa State College (University), a position he held from 1914 to 1946. Several horse carriages of the phaeton/surrey style appear in the background.
The Department of Animal Husbandry was established in 1898. At that time, the department had five breeds of horses, six breeds of cattle, seven breeds of sheep, and breeds of swine used for classes and research in breeding and feeding. Also in 1898, students in the Animal Husbandry participated in the first intercollegiate livestock judging contest at the Trans-Mississippi Exposition in Omaha, Nebraska. Throughout the 20th century, the curriculum has focused on animal breeding and nutrition, meat and milk production, and pork, poultry, beef, dairy, sheep and equine systems management. The name of the Department was changed of the Department of Animal Science in 1962. The Department of Poultry Science merged with the Department in 1971.

Gray Percheron stallion

Description

Handler posing a gray Percheron stallion (most likely Elmer Koons with Jalap, the chief herd sire for Iowa State College [University] in the 1920's) in the front of the Old Cattle Barn.
The Old Cattle Barn was built of frame construction and gable style roof between 1861 and 1863, with subsequent additions thought to be completed in 1874. It originally measured 54 ft 70 feet, which included a 16 foot drive through alley, but was later expanded to include a perpendicular wing for additional storage. Materials used to build this barn included a stone foundation, wood siding and pine shingles. It housed approximately 50 cattle, feed and farm machinery. These structures were razed in 1929.

Horse Barn 2, 1958

Description

What is now known as Horse Barn 2 in the year 1958.
Horse Barn 2, located at the corner of Stange Rd. and University Blvd. and has housed horses on the Iowa State University campus since its construction between 1923 and 1926. U-shaped in design, the barn was constructed of clay tile with gambrel style roof and numerous gabled and shed dormers for ventilation. The interior of the building includes numerous box and tie stalls on wood block floors. Feed storage, office space and student rooms are also included.
